Fish’s gills resemble human lungs but they need water to keep the gills hydrated.when out of water the gills dry up and there are arches of gills which collapse.thus the blood vessels donot get adequate oxygen and the fish dies of reduced oxygen level in blood.Though there are some fish which can live even out of water for quite a long time.

So basically, fishes depends on dissolved oxygen in water. They filter the oxygen with their gills. But outside the water they cant breath due to absence of lungs due to which they jump ,jerk ultemately leading to death.
